RAW explores green coffee from cultivation to roasting: grading, moisture and density analysis, defect identification, storage, and the political and economic frameworks that decide what raw coffee is worth — and to whom. From origins and terroir to trade models, you build a critical, confident view of the green coffee world. RAW challenges the illusions of neutral trade by showing how structural imbalances still define access, quality, and pricing today.
HOW IT WORKS
RAW is delivered in-person over 4 full days of practical workshops, sample grading, and logistics case studies. You work with real green coffee, analyse defects, measure moisture and density, and work through real trade and sourcing decisions. Sessions combine technical depth with critical discussion of global frameworks that shape green coffee value. You leave ready to evaluate and source responsibly.
